Low-fat Healthy Apple Pancakes


Ingredients:
  • 2  egg yolks
  • 1  tablespoon  vegetable oil
  • 4  egg whites
  • 1/4  teaspoon  nutmeg
  • 1  cup  skim milk
  • 2  teaspoon  double-acting baking powder
  • 2 1/2  teaspoon  sugar
  • 1  tablespoon  cinnamon
  • 1/2  cup  oat bran
  • 1/2  cup  whole wheat flour
  • 2  tablespoon  flax seeds
  • 2  apples, peeled and chopped
Directions:
Mix all the dry ingredients together. In another bowl, mix all wet ingredients except the egg whites and apples.

Beat egg whites until stiff.

Combine the wet and dry ingredients and stir until barely mixed. Fold in beaten egg whites unitl no chunks can be seen.

Heat a frying pan and spray lightly with cooking spray. Pour rounds batter on to the pan. Cook over medium heat. When they are brown, turn them over and brown the other side.

Serve with lite syrup, butter, or applesauce.

Makes 12 pancakes. Per serving: Calories - 87, Fat - 3gm, Carbs - 12g
