Ingredients:

shredded Monterey Jack cheese
- 3
cloves garlic
- 2

half and half or whipping cream
- 1
10oz pkg. frozen spinach
- 1/4
cup
shredded cheddar cheese
- 1
ounce
grated parmesan cheese

Directions:

Preheat oven to 350F.
Thaw, drain, and roughly chop the uncooked spinach and place it in a casserole dish. Mince garlic and add to the casserole dish, with the pepper. Toss all incredients with the shredded cheddar and Monterey Jack cheeses. Drizzle with the cream and sprinkle with Parmesan cheese. Place in the oven.
If the casserole seems very full, don't worry. It will reduce to less than half by the time it has finished baking.
Bake, covered, for 10 minutes; uncover and bake for another 15 minutes.
