Low-fat Mushroom Stuffed Pork Chops


Ingredients:
  • 2 1/2  tablespoon  chopped celery
  • 2 1/2  cup  fresh bread cubes
  • 2  tablespoon  chopped onion
  • 2 1/2  cup  chopped mushrooms
  • 1/4  teaspoon  dried thyme
  • 1/2  cup  chicken broth
  • 1  teaspoon  butter
  • 1/4  teaspoon  salt
  • 1/4  tablespoon  pepper
  • 4  4oz center loin chops
Directions:
On rack in broiling pan, broil pork chop, turning once, until rare in the middle, about 5 min. Prehat oven to 325F. Arrange chops in a large casserole, big enough to hold them in one single layer, sprinkle with 1/8 teaspoon of salt, pepper and thyme. Add broth, cover,and bake for 45 minutes.

While the chops are baking, in a small skillet heat butter until melted. Add onion and garlic. Saute until onion is translucent. Add mushrooms, celery and remaining 1/8 salt, pepper and thyme. Saute for 5 minutes. Add bread cubes.

Spoon an equal amount of stuffing mixture onto each baked chop; bake, uncovered, for 15 minutes.
