Roasted Citrus Turkey Breast


Ingredients:
  • 1/4  teaspoon  Paprika
  • 2  oranges
  • 1  lemon
  • 1/2  teaspoon  fresh sage
  • 1/2  teaspoon  fresh rosemary
  • 1/2  teaspoon  pepper
  • 1  teaspoon  fresh parsley
  • 1/2  teaspoon  fresh thyme
  • 1  lb  Turkey
Directions:
Start with thawed turkey breast; rinse and then pat with a paper towel so that it is still slightly moist. Preheat the oven to 325F.

Finely chop the herbs and orange zest. Be careful to avoid the pith (the white part) of the orange. Mix the herbs and zest together. Add the paprika and the pepper and mix well.

Cut each fruit in half.

Set the turkey breast on a raised rack in a roasting pan and squeeze the lemon and oranges over the turkey breast to coat it. Sprinkle all of the herbs over the breast, coating it as well as possible, including the underside.

Basting regularly with its own juices, roast the turkey uncovered for about two hours, or until the internal temperature reaches 170F. Remove the skin before serving.

TIP: About half way through cooking, cover the turkey loosely with foil to avoid drying it out.
