Fat-free Fire and Ice - Watermelon Salsa


Ingredients:
  • 1  clove garlic, minced fine
  • 1  green onion, chopped
  • 1  jalapeno pepper, raw
  • 3  cup  watermelon, diced
  • 1  green bell pepper
  • 1  ounce  lime juice
  • 1/4  cup  cilantro, fresh chopped
Directions:
Dice watermelon into 1/4 inche cubes. Seed and dice green bell pepper into very small pieces. Quarter the jalapeno lengthwise and remove the seeds, thinly slicing crosswise. Slice the green onion finely. Mince the garlic.

In a large bowl, combine all ingredients. Mix well and refridgerate for at least 1/2 an hour.

Serve with baked low-fat tortilla chips. As an alternate idea, this is great with grilled fish.
