Ingredients:

red bell pepper

fresh dill

medium zucchini

unsalted butter

small onion, diced

Directions:

Cut the red bell pepper in half, remove stem, seeds and white veins. Dice the onion fine. Quarter the zucchini lengthwise; cut into 1/2-3/4 inch cubes.
Melt butter in a skillet over medium heat, add onion and saute until transluscent. Add red pepper, zucchini, stirring for about 5 minutes until tender. Add a twist of fresh ground pepper.
