5-Minute Creamy Zucchini


Ingredients:
  • 1/2  teaspoon  black pepper
  • 1/2  cup  plain low-fat yogurt
  • 1  red bell pepper
  • 1  cup  fresh dill
  • 3  medium zucchini
  • 2  tablespoon  unsalted butter
  • 1  small onion, diced
Directions:
Cut the red bell pepper in half, remove stem, seeds and white veins. Dice the onion fine. Quarter the zucchini lengthwise; cut into 1/2-3/4 inch cubes.

Melt butter in a skillet over medium heat, add onion and saute until transluscent. Add red pepper, zucchini, stirring for about 5 minutes until tender. Add a twist of fresh ground pepper.

Turn heat on low, then stir in the yogurt and dill. Stir until blended; serve garnish with a sprinkle of dill or some low-fat cheese.
