Low-fat Low-carb Spicy Chicken Fingers


Ingredients:
  • 4  6oz chicken breasts, cut into 3 strips each
  • 2  tablespoon  Dijon mustard
  • 2  tablespoon  Soya sauce
  • 1/3  cup  Lemon juice
  • 1  teaspoon  vegetable oil
  • 1/4  teaspoon  red pepper flakes or cayenne pepper
Directions:
Mix lemon juice, soya sauce, mustard, oil and pepper in a medium sized bowl. Remove 1/3 of the mixture to a bowl to use later to baste the chicken. Add the chicken strips and toss well to coat. Cover the bowl of chicken and ingredients with plastic wrap and refrigerate for at least an hour.

Preheat the broiler and lightly grease the broiler pan with non-stick spray. Arrange the chicken strips on the rack, about an inch apart.

Broil 4-5 inches from the heat for 5 minutes, basting once with the reserved 1/3 liquid. Turn the chicken over and broil 5 minutes longer, again brushing with the reserved liquid.
